Costa Palmas Moments: Wine Pairing with Mexican Food

“Wine is the human race’s most refined beverage,” said Rick Bayless, acclaimed cookbook author and chef. “So, I’m committed to pairing it with real Mexican food, which is both sophisticated and elegant.”

We couldn’t agree more and were inspired to share some wine pairing suggestions from the Costa Palmas Beach Club team. As you get ready to host a summer BBQ or enjoy a meal at Costa Palmas, a traditional Mexican dish is a must-have. Our Food & Beverage Manager at Costa Palmas, Daniel Cabrera, has prepared a few recommendations to inspire your next Mexican themed meal with wines from around the world.

The wine recommendations are available at the Costa Palmas Beach Club, so in a few weeks you could be enjoying a fresh ceviche or tacos with your new favorite wine!

Seafood Ceviche

Cloudy Bay Sauvignon Blanc from New Zealand. This wine has citrus flavors, along with rich notes like lemon curd and guava. It displays a fresh counterpoint and great acidity, creating the perfect marriage with a fresh ceviche prepared by Chef Gonzalo.

Fish Tacos

Scarpetta Pinot Grigio from Friuly, Italy. This medium bodied wine features a light straw color with just a hint of salmon, and an aroma of stone fruits and melon with minerals. It is wonderful on its own as an aperitif, or pairs perfectly with lightly grilled fish.

Shrimp Tacos

Trimbach Riesling from Alsace, France. This wine features a spicy nose that has a crisp edge of lemon as well as some flinty nuances. The palate has a very lemony and dry feel along with a crisp finish, creating a perfect pairing with our shrimp tacos that you can enjoy at our beachfront bar.

Pastor Tacos

Minuty Rosé from Provence, France. This fresh, lively and perfectly balanced wine pairs really well with “achiote,” which is the main ingredient in the sauce for the pastor beef. Garnishes like the pineapple create a perfect pairing, which allows you to keep drinking the same wine, especially on a warm day.

Carnitas Tacos

Nickel & Nickel Cabernet Sauvignon from Napa Valley. This soft and easy-to-drink wine features round tannins and an attractive berry, currant, chocolate and almond character. Medium to full body and earthy finish will balance the fat from our traditional carnitas, creating a magnificent pairing.

Flank Steak

Sassicaia Cabernet Sauvignon from Italy. This signature wine from Tuscany and the first CS produced in the area, offers full-body and great balance. Sassicaia is all about delicacy, finesse and grace. Highly recommended with grilled steaks—preferably served medium or medium-rare—that are prepared with delicious spicy sauces that pair to perfection.
