Costa Palmas Announces New Pastry Chef

Delectable treats and sweet creations are the specialty of Chef Salvador Robles, the new Costa Palmas Pastry Chef. Originally from Guadalajara, Jalisco, Chef Robles puts his distinctive spin on traditional desserts utilizing Mexican vanilla alongside native and organic ingredients that unite to create edible masterpieces that delight with every bite.

Chef Robles fascination with pastries and desserts began at an early age when he and his brothers worked in a traditional Pandaria (bakery). Chef Robles has worked in several esteemed hotels along the Baja, most recently assuming the role of Head Pastry Chef at Costa Palmas.

With passion and creativity fueling his creations, combined with equal shares of love for chocolate and desserts, Chef Robles melds flavors expertly and is known as one of the most promising young pastry chefs currently in the local gastronomy scene.

Influenced by Key Lime pie, a whipped graham cracker ice cream alongside lemon gel and orange torched meringue sits on a foundation of lime sand

 

CHOCOLATE LAVA CAKE

A decadent dessert featuring papantla vanilla ice cream, Grand Marnier berry compote and dark chocolate sauce

 

GRILLED PLANTAIN

This fruit-based desert features chocolate microsponge alongside dulce de leche gel and chocolate tuile and is served with smoked chocolate ice cream

 

COSTA PALMAS TRES LECHES

Soaked with leche, this traditional wet cake features green apple gel and vanilla ice cream.
